I always get asked if I cook for myself. The short answer is rarely.
Often, the last thing I want to do when I cook all day is do it some more. And to be honest, I enjoy cooking for others more than for myself.
So when I do cook for myself, I usually make something requiring little effort and containing 5 ingredients or less.
This dish is highly satisfying and comes together in about 15 minutes.

INGREDIENTS: (serves 1)
- 15 asparagus spears
- 1 tbsp. olive oil
- 1 egg
- ¼ cup white vinegar
- shaved parmesan
- chopped parsley
- wedge of lemon
- kosher salt and cracked black pepper to taste
Asparagus:
-Place a large sauté pan on medium-high heat and add olive oil once pan is hot.
-Add asparagus and season with salt and pepper.
-Sauté until light golden brown, (about 2 minutes)- rotating to cook evenly.
To finish:
-Garnish with poached egg, shaved parmesan, chopped parsley, lemon juice and cracked black pepper.
