Watermelon Ice {re-eatables}

I don't know what year it was when I first started to become one of those people who never remembers anyone's names.  I'd shake a hand- sometimes even give a hug- and it's as if my brain erases itself when the whole name exchange takes place.  I feel really bad about it.  Even when I consciously make the effort to remember, it just doesn't happen.  It gets me into some really tricky situations at times.

Oh...it's been a long time....how are you related to me?

Hi...youuuuu keep losing weight every single time I see you.

It would happen to me a lot when I worked in restaurants.  There'd be so many people I'd see everyday, have numerous interactions with, and still have no idea.  The worst is when you're put in the position of having to make introductions.  I cringe.

This watermelon ice uses the scraps from my Watermelon w/ Goat Cheese Mousse & Mint hors d'oeuvres.  I hope I'm not insulting anyone by posting this lame-o "recipe," but rather it's just a reminder that scraps can be utilized in the simplest of ways.

Just blend and freeze.

Add them to sparkling water, some prosecco, a lil' vodka, lemonade or eat them as a healthy dessert!
