I had a shut-yo-face moment the other day. I needed to close-my-jaw, stop-yapping and walk away, but not one of those happened.

However, assuming one even recognizes their mistake, there are two different types of these brain-failure episodes.

There's the I just said something and immediately realized it or the I said something and realized it hours/days/years later.

This particular case was the second and it only took me 10 hours...AND it's a situation where saying anything more would just dig me deeper.  Sucha rockstar.

So here's my prescription for those moments: BLTA bites.

  • Take on an empty stomach
  • Allow brain to process while consuming
  • Use when needed for shut-yo-face moments

INGREDIENTS: (makes about 45 hors d’oeuvres)

  • 5 slices brioche, ½” slices
  • 6 tbsp. butter
  • 1 medium avocado
  • 2 tbsp. lemon juice
  • 30 cherry tomatoes
  • scallions
  • 2 pieces of pancetta or bacon, cooked until crispy
  • kosher salt and ground black pepper, to taste

For the brioche:

-Use a 1¼” round cutter to cut out pieces from the brioche (about 9 out of each slice).
-In a large sauté pan over medium heat, melt 4 tbsp. of the butter. 

Add the brioche-cut outs (not all at once; leave about an inch of space between each), and sauté until golden brown on each side.  Add the remaining 2 tbsp. of butter for the next batch as the bread will absorb a lot of the butter; reserve.

For the avocado mousse:

-In a small food processor, add the avocado, lemon juice and a pinch of salt.
-Pulse until very smooth; place in a pastry bag with a star tip.  There will be extra mousse leftover; reserve in refrigerator.

To finish:

-Cut the cherry tomatoes in half lengthwise.
-Slice ½” pieces of the pancetta or bacon (to go over the tomatoes).
-Thinly slice the scallions on a deep diagonal.
-Assemble by topping the brioche with a dollop of avocado mousse and top with a tomato half (cut side up/ garnish with a tiny salt and pepper), the pancetta/bacon, and a piece of scallion.
