Peach & White Chocolate Almond Flour Muffins

The weather, I know!  A couple of evenings ago,  my facebook feed was smothered with NYC friends posting about their 95 degree hail storm while every Angeleno was displaying cell phone shots of the extraordinary sunset we were gifted.

I, ironically, was driving down Sunset Boulevard, when I noticed that everything around me had an orange glow (and I was a good few miles from the beach).  I actually pulled my car over to take the above pic...it was seriously the best sunset I've ever experienced.

These are like that sunset.  I said it.

These almond flour based, maple syrup-peach-white chocolate sweetened muffins are like a sunset.  For the time of consumption, you savor the moment, invite peace, and recognize the privileges of being mother nature's audience.

At least that's how I felt, totally profound.

Peach & White Chocolate Almond Flour Muffins

Adapted from Roost and Honey & Jam

INGREDIENTS: (makes 8 muffins)

  • 2 cups almond flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 2 eggs
  • ¼ cup melted butter, cooled
  • ¼ cup maple syrup
  • ½ cup chopped white chocolate (in small chunks, from a bar)
  • 1 peach, small chop (about ¾ cup)

-Preheat oven to 350˚ F.
-Chop the white chocolate into small chunks and cut the peach into ½” cubes; reserve.
-In a mixing bowl, combine the almond flour, salt and baking soda.
-In another bowl, combine the eggs, melted butter and maple syrup.
-Add the wet ingredients into the dry ingredients and mix until well incorporated.
-Gently mix in the white chocolate (including any “dust”) and the peaches, reserving some peaches to place on top.
-Bake at 350˚, 25-30 minutes (or until golden brown).
