On the treadmill recently, I was changing the music on my phone and was startled by a really loud thumping noise. At first I thought it was one of those four wheeled soiled towel carts being pushed over the tiled floor (all of them are actually marked in bold caps: SOILED TOWELS, which I find very amusing). But the sequence of sound wasn't right. I looked over at the mirror aligning the room and saw a woman, 3 machines over, who was the source.
She was going very fast- hence the loud thumps- and the machine was at a steep incline. The t.v. was on, although she wasn't looking at it or wearing any headphones. I'm always wary of gym people who do nothing in addition to working out.
She looked in pain but not just physical, something internal.
I've always advocated that exercise is therapy. It helps clear the mind and get the blood flowing, reminding you that your heart still works. Maybe her heart hurt for something?
I watched her from behind my sunglasses- one of the many reasons I wear sunglasses at the gym: to spy on people. But my mood began to shift- I started feeling sad because she just looked so sad, like she was on the brink of tears.
My goal for that morning was 4 miles, which on a good day is *ahem * 43 minutes. But there I was, drowned out by her own melancholy rhythm, with 20 minutes down and 2.5 miles to go. Now I was morose and didn't feel like running.
I did what I needed to do:

Since the following day was still on its way, I completed my *ahem * 55 minute goal, showered and made some waffles for the morning.
Zesty Banana Almond Flour Waffles
INGREDIENTS: (makes about 12, depending on the size of choice)
- 3 cups (4 ounces) almond flour
- ½ teaspoon kosher salt
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 3 medium bananas, mashed (about 1 cup)
- 2 tablespoons maple syrup
- 4 eggs
- zest of 1 lemon
-Plug in and warm up your waffle maker. Have nonstick spray ready.
-In a large mixing bowl, whisk together the almond flour, salt, baking soda, cinnamon and nutmeg.
-In a smaller, separate mixing bowl, mix the bananas, maple syrup, eggs and lemon zest. It’s ok if there are still some chunks of banana.
-Add the wet ingredients to the dry and whisk together everything. Let sit 5 minutes or so (the batter will thicken as the almond flour absorbs a lot of the liquid).
-Spray down your waffle iron with nonstick oil and use a 1/3 cup scoop for each waffle (this may vary depending on the shape of your molds).
-Bake according to your machine’s temperament.*
*I never trust that little light on my machine because it always overcooks them. Use your judgment.
