Let's be clear that I'm not on a new year juice cleanse nor do I ever have the desire to do one. When I get back into my groove of health-conscious consumption all will be well, but it's more than fair to say that since I've been splurging a little too often in the nutrition category lately–I needed to intervene. My hopes are that if I keep enough green juice around, and force myself to keep pounding the stuff throughout the day, my body will reset itself from this madwoman sugar addiction I've tapped into.
The argument with juicing is that fiber is lost, which is where the nutrients mostly exist. That's why I use a Vitamix. Rather than straining, I dilute the mixture with water and ice until I get the consistency I want. Super sludgy is one way to not enjoy this.
Pears, especially now, are even better than apples because they are sweeter, making this more palatable. Obviously you can tweak the flavor to however you'd like, but I do love this concoction since the flavor is clean, the produce is readily available, and it's super nutritious. I actually make this often for one of my clients, and use this recipe as a template. Sometimes I add a pinch of cayenne, or some ginger, or some fresh mint. Whatever's around. Be warned that the ratio below is not that sweet. I'd add another apple or very ripe pear to the mix for a grander blood sugar spike.
For 2.5 quarts:
- 3-5 cups water + 1 cup of ice
- 1/2 english cucumber, unpeeled and chopped
- 1 large apple (go for a sweeter variety such as red delicious....or pears!)
- 1 small celery stalk, chopped
- 2 large handfuls baby spinach
In a Vitamix, blend the water, ice, cucumber, apple and celery until smooth. Add the spinach and blend until smooth and bright green. Adjust consistency with additional water and ice.
*Chef's Note: It's essential to use ice in this as the green color is better retained and very cold juice tastes much better than somewhat cold. Also, the spinach is added at the end to make this extra green.
*You don't need a Vitamix (well, you do), but you do need a very powerful blender.
